  • 1 cup (200g) Raitip Peeled Mung Beans
  • 6 cups (1.5L) Water
  • 1/2 onion, chopped
  • 2 carrots, chopped
  • 1 celery stalk, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Rinse the mung beans in cold water until the water runs clear.
  2. Combine the mung beans, water, onion, carrots, celery, salt, and pepper in a large pot.
  3. Bring the pot to a boil, then reduce heat to low and simmer for 30-40 minutes, or until the beans are soft.
  4. Puree the soup using an immersion blender or in a blender until smooth.
  5. Serve hot.

Mung Bean Salad

Ingredients:

  • 1 cup (200g) Raitip Peeled Mung Beans
  • 1/2 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup (60ml) rice vinegar
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (6g) cilantro, chopped

Instructions:

  1. Rinse the mung beans in cold water until the water runs clear.
  2. Combine the mung beans, cucumber, red onion, rice vinegar, lime juice, honey, salt, pepper, and cilantro in a large bowl.
  3. Toss to combine.
  4. Serve chilled.
