- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can vegetable broth
- 1 pound okra, trimmed and cut into 1-inch pieces
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cumin, chili powder, salt, and pepper and cook for 1 minute more.
- Stir in the tomatoes, broth, and okra. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the okra is tender.
