Ingredients:

  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can vegetable broth
  • 1 pound okra, trimmed and cut into 1-inch pieces

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, chili powder, salt, and pepper and cook for 1 minute more.
  3. Stir in the tomatoes, broth, and okra. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the okra is tender.
  4. Serve hot.

  2. Add the okra, salt, and pepper and cook for 5 minutes, or until the okra is tender.
  3. In a small bowl, whisk together the soy sauce, vinegar, cornstarch, and water.
  4. Add the soy sauce mixture to the skillet and cook until the sauce thickens, about 1 minute.
  5. Serve hot.
