  • Bread
    • To make a basic white bread, combine 1 cup of warm water (105°F to 115°F) with 2 teaspoons of sugar and 2 1/4 teaspoons of Bruggeman Instant Yeast in the bowl of a stand mixer fitted with the dough hook. Let stand for 5 minutes, or until the yeast is foamy.
    • Add 3 cups of all-purpose flour, 1 teaspoon of salt, and 1 tablespoon of olive oil to the yeast mixture. Beat on low speed for 2 minutes, then increase the speed to medium and beat for 6-8 minutes, or until the dough is smooth and elastic.
    • Grease a large bowl with olive oil. Place the dough in the bowl, turning to coat all sides in the oil. Cover the bowl with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.
    • Punch down the dough and divide it in half. Shape each half into a loaf and place in two greased 9x5-inch loaf pans. Cover the pans with plastic wrap and let rise in a warm place until doubled in size, about 30 minutes.
    • Preheat oven to 375°F. Bake the loaves for 30-35 minutes, or until golden brown. Remove from the pans and let cool on a wire rack.
  • Rolls
    • To make a basic dinner roll, combine 1 cup of warm water (105°F to 115°F) with 2 teaspoons of sugar and 2 1/4 teaspoons of Bruggeman Instant Yeast in the bowl of a stand mixer fitted with the dough hook. Let stand for 5 minutes, or until the yeast is foamy.
