  • Mango Curry

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can coconut milk
  • 1 ripe mango, peeled and diced
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and ginger and cook for 1 minute more.
  4. Add the cumin, turmeric, and cayenne pepper and cook for 1 minute more, stirring constantly.
  5. Add the diced tomatoes, coconut milk, and mango.
  6. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the mango is tender.
  7. Stir in the cilantro and salt and pepper to taste.
  8. Serve over rice or quinoa.
